I know how busy life can be especially as a parent.

The juggle of school, grocery shopping, house cleaning, laundry (and that feeling of wondering if you’ll ever see your laundry room floor), bath time, dance and soccer schedules, music lessons, gymnastics and work for many of you on top of the never-ending list. Just writing this has exhausted me and I feel like I need a nap. What I can tell you is, that although it may not feel like it will ever change, it does and it truly happens in a blink of an eye.

For the purpose of this article I understand that the blink hasn’t happened, and many of you are time poor, zapped of energy, and the last thing you want to hear at four p.m. is the question that never, ever ends….. ‘Mum or Dad, what’s for dinner?’

To try and save you some time and to be kind to your budget I thought I’d share a few recipes that I know are tried and true and will delight even the pickiest of palates.

Recipe Rescue #1 is this amazing Lasagna from CasaDeSohn.com. This lasagna is one that you will dream about. You will find yourself sneaking into the fridge for just another bite before bedtime. Not only is it perfect for dinner or a lazy weekend lunch it is PERFECT as leftovers and travels in lunch boxes and freezes well.

Recipe Rescue #2 is a warm Irish Stew from Taste.com.au. Another crowd pleaser, for sure. This recipe can be made well in advance and will naturally enhance as you stretch it out.

Recipe Rescue #3 is one Australians love and have perfected over the years. It’s Donna Hay’s Roasted Pumpkin Soup. No winter is complete without a bowl of pumpkin soup and a crusty roll. Again, another one to please and one that saves and reheats well.

Recipe Rescue #4 is another favourite from CasaDeSohn.com Winter Beef Stew. This one is perfect to use up veggies and anything else in the pantry or fridge. It is adaptable and seriously good so use it as a guide and make it your own.
